Is it possible to stop certain emergency situations like engine failure or birdstrike because I don’t have any emergency services yet and can’t afford them, (I’m on Hard)

Nope, Unless you edit the JSON files and turn emergencies down and then turn them back up
You can disable emergencies permanently though

Yeah unfortunately there is no way of singling out specific incidents, you can always just refuse them to land…
