Can we assign check in desks and security check point to a specific stand ? For instance creating multiple parts of the airport " small planes, low cost aera, big planes… ) , and different entrances.

Actually, not really.
But as far as I know, you can set up separated baggage circuits and then assign some check-in desks to another baggage bay than the others and assign the stands to this baggage bay. Don’t forget the baggage claim area!
I hope you’ve got my point.
As far as I know, there isn’t much you can do for the security except of separate them via completely different terminal buildings.
You can built separate secure zones. This way the pax go to the right zone,where the gates are.
