Not sure how you setup the UI snapping inside unity but it should be easily allow for resizing of the game window, or at least add 21:9 resolutions to the mix.

Posting this here as it the closest I could find in a search…
When I am in full screen mode I play at 1920x1080 but as soon as I switch config screen to windowed that drops to 1600x900 with no option at all for 1920x1080.
The workaround atm is to start in full screen mode then ALT/ENTER to change to windowed mode. Not entirely ideal
